
Eating a healthy lunch doesn't have to be expensive or time consuming. This recipe serves 2 people and won't cost you more than £5. It's a great choice for a throw together lunch, providing at least 3 portions of vegetables per person, as well as some healthy fats and plant-based protein.
Ingredients
1 tablespoon olive oil
1 can of lentils (I use Bijoux)
1 leek, sliced
4-6 stalks of cavolo nero, sliced thinly
1 spring onion, sliced
6 tablespoons Apple cider vinegar
Salt & pepper
Optional: 1 avocado, toasted sesame seeds
Method
Heat oil in a large frying pan
Add the lentils, leek, cavolo nero and spring onion, stir continuously until greens start to wilt
Pour the apple cider vinegar in and continue to stir for about 5 minutes
Season with salt & pepper as desired
Serve with half an avocado and sprinkle toasted sesames to finish
