Banana Bread (GF, Ve)

INGREDIENTS

2/3 cup sugar - brown / white / coconut palm

1/3 cup of oil - grapeseed / vegetable / olive 3 cups Dove's farm gluten free self-raising flour

1 teaspoon baking powder

1/4 teaspoon baking soda

2 medium ripe bananas

1 teaspoon cinnamon

optional: 2 tablespoons cacao nibs

METHOD

Preheat the oven to 180 degrees

Mash the bananas in a bowl and leave to one side

In a larger bowl, mix together the flour, sugar, baking powder, baking soda and cinnamon

Add in the mashed bananas, oil and cacao nips. The mixture should be very thick however if it hasn't come together you can add in a splash of plant-based milk (I use almond milk)

Spoon the mixture into a greased or non-stick loaf pan and bake for around 40-50 minutes (remembering every oven acts a little differently so keep an eye on yours)

Leave to cool slightly before serving - it's delicious with a scoop of coconut yoghurt!
